Almost nothing is more contentious in the world of nutrition these days than dairy. Does it make up part of a healthy diet or not? The case against milk and its derivatives — yogurt, butter, cheese — is simple. Humans are the only animal that drink the milk of another species. And according to a lot of people (often vocal proponents of vegetarianism) that makes dairy unnatural and unhealthy.  

For early humans the tolerance of dairy meant a secure, nutrient-dense source of food that walked on its own four legs. To put it another way, cattle turned something that humans couldn’t eat (grass) into something they could (dairy products) — an amazing adaptation for early pastoralists trying to survive on the savanna. In return, ruminants gained human protection from predators. But does that mean taking advantage of this friends-with-benefits situation (i.e. consuming dairy) is natural?
